ROASTED CORN TOPPING FOR BBQ:

DAY BEFORE...
Roast ears of corn and poblano peppers on bbq
Cut corn from husk and put in bowl
Put peppers in baggie til sweated
Remove skin and stem
Cut in thin strips and add to corn in bowl.

NEXT DAY...
Sprinkle with Captain BBQ rub
Add sour cream enough to cover
S
prinkle with feta cheese and mix well
Keep in fridge 2 hours before using on grilled chicken or fish


JALAPENO MUSTARD SAUCE:

This is a great sauce for a backyard bbq.. IT'S A WONDERFUL BBQ EXPERIENCE!

2 - JALEPEÑOS ROASTED ON BBQ AND DICED
1/2 CUP - BACKYARD HONEY MUSTARD SAUCE
1 Tbsp - WHITE VINEGAR

Put all these in bowl for at least 2 hours.
Grill or slow smoke...beef, chicken, pork, or seafood and when done cut in strips
Put flour tortillas on bbq ..to heat up.....then put your meat on it.....spoon on jalepeno mustard sauce and serve at once...HOT!


NUCLEAR POWERPLANT CHICKEN WINGS:

DAY BEFORE:
Marinate 15 or so chicken wings or legs in enough of your favorite hot sauce to cover
Sprinkle generously with Nuclear Powerplant BBQ Rub
Add 2 tsp white vinegar and mix well...let sit overnight...

NEXT DAY:
Combine
1 Cup - of your favorite Hot Sauce
1 Tbsp - Nuclear Powerplant BBQ Rub
1 Cup - soft butter
1 Tbsp - white vinegar

Combine in a separate bowl:
1 Cup - blue cheese
1 Tbsp - horseradish sauce
1 Tsp - hot sauce
1 Tsp - Nuclear Powerplant BBQ Rub

BBQ chicken as usual, and disregard extra marinade in chicken bowl
When fully cooked, put in big bowl with hot sauce mixture
Serve with blue cheese mixture, carrots, and celery...and alot to wash them down with..............intense flavor with heat

SOAK EARS OF CORN IN SALTED WATER OVER NIGHT
BBQ THE NEXT DAY TIL BROWN
PEEL BACK HUSK
RUB WITH BUTTER AND SPRINKLE WITH SECRET SPICE

PRIZE WINNING RIBS:

DAY BEFORE:
Spinkle ribs generously with CAPTAIN BBQ BBEF AND RIB RUB...wrap in saran wrap and let sit in fridge overnight.........

NEXT DAY :
Cook as usual til brown
Drizzle honey on top to cover and finish cooking at low low heat until they can be pulled apart by hand
Smother in BACKYARD BBQ SAUCE!
...YAHOOOOOOOOOOOOO!


GREATEST BURGERS AROUND:

DAY BEFORE:
In a bowl, mix...
1 lb - Hamburger meat covered generously with BBQ BEEF AND RIB RUB
BACKYARD BBQ SAUCE until meat is a little wet
2 tsp minced onions

Let sit overnight........

NEXT DAY:
Cook burgers as usual
Melt pepperjack cheese on top
Serve on toasted english muffins


BBQ BANG FOR SALAD:


DID YOU KNOW THAT IT'S AWESOME IF YOU SPRINKLE COOKED CHICKEN BREAST WITH BBQ RUB...JULIENNE THE MEAT AND THEN PUT ON TOP OF SALAD AND SERVE WITH BACKYARD HONEY MUSTARD SAUCE...


THE CAPTAIN'S BOURBON STEAK:

DAY BEFORE:
Soak steaks overnight in bourbon whiskey

NEXT DAY:
Sprinkle generously with CAPTAIN BBQ BEEF AND RIB RUB
Let sit at room temperature for 1 hour
While this is sitting, mix 3/4 parts room temperature butter to 1/4 part bourbon whiskey sprinkle with rub to taste
BBQ steaks as usual, with hickory or oak if possible
Put bourbon butter on steaks after cooked ..and eat..

SO ANYWAY, THE OTHER DAY I PUT DUCK BREASTS IN A BAGGIE AND COVERED THEM IN BACKYARD HONEY MUSTARD SAUCE FOR 24 HOURS THEN SLOW COOKED ON BBQ .....YAHOOOOOOOOOOOO!


SEAFOOD MARINADE:

1 1/2 CUPS - TERIYAKI SAUCE
1 CUP - SHERRY
3 Tbsp - MINCED GARLIC
2 Tsp - MINCED GINGER
2 Tsp - SESAME OIL
2 Tbsp - FINE SLICED SCALLIONS
1 Tbsp - SECRET SPICE

Mix all together in bowl and marinate 2 to 24 hours and cook as usual

TOMATO ORANGE SALSA:

3 - ORANGES DICED SMALL (SEEDS REMOVED)
1 1/2 Cup - TOMATOES SEEDED AND DICED
1/4 Cup - RED ONION DICED SMALL
1/4 Cup - FINE CHOPPED PARSLEY
1 Tbsp - MINCED GARLIC
1 Tbsp - BALSAMIC VINEGAR
1 Tsp - GINGER MINCED
1/8 Tsp - CAYENNE PEPPER
1 Tbsp - HONEY
SALT AND PEPPER TO TASTE

MIX TOGETHER 2 HOURS BEFORE SERVING...GREAT FOR SEAFOOD OR CHICKEN


RUM SAUCE MARINADE FOR STEAK:

3 - Flank Steaks
1 Cup - Dark Rum
1/2 Cup - Brown Sugar
1/2 Cup - Olive Oil
4 Tbsp - Minced Garlic
2 Tbsp - BBQ BEEF AND RIB RUB
1 Small Red Onion- Diced Fine
1 Tbsp - Hot Pepper Flakes


DAY BEFORE:
Marinate Overnight

NEXT DAY:
Grill steaks as usual
Serve on a roll with lettuce, tomatoe, and red onion
GREAT WITH CHEESE!


VEG HEADS UNITE!

PORTABELLO MUSHROOM MARINADE:

1 CUP - OLIVE OIL
1/4 CUP - BALSAMIC VINEGAR
1/4 CUP - GRAIN MUSTARD
2 Tbsp - LEMON JUICE
2 Tbsp - MINCED GARLIC
1 Tbsp - SECRET SPICE

DAY BEFORE:
Mix ingredients and marinate with mushrooms overnight

NEXT DAY:
Grill mushrooms as usual
GREAT WITH ANY VEGGIES!


APPLE HORSERADISH SAUCE
(FOR BEEF AND POT ROAST):

10 - APPLES PEELED AND SEEDED
6 Tbsp - HORSERADISH
2 Tsp - VINEGAR
1 Tbsp - SUGAR
1 Tbsp - BBQ BEEF AND RIB RUB

Sprinkle apples with lemon juice, sugar, and bbq rub
Bake in 350 degree oven til soft (about 25 minutes)
Mix in bowl with all other ingredients
Season with salt and pepper


CRAB TOPPING FOR SEAFOOD:

1 Pkg - DRAINED CRABMEAT
8 OZ - SOFT CREAM CHEESE
1 Small - ONION DICED FINE
2 Tsp - Horseradish

2 Tbsp - WORCHESTERSHIRE SAUCE
2 Tbsp - MAYONAISE SPRINKLED WITH BBQ BEEF AND RIB RUB

MIX IN BOWL
SPREAD ON SEAFOOD
BAKE AS USUAL

*GARNISH WITH ALMONDS AND SCALLIONS


ARGENTINA BEEF:

1 CUP OLIVE OIL
1/2 CUP MINCED PARSLEY
2 T OREGANO
3 T GARLIC
2 T BBQ BEEF AND RIB RUB

MIX TOGETHER AND MARINATE OVERNIGHT
GRILL AS USUAL THE NEXT DAY


CAPTAIN BBQ KABOBS:


Cut zucchini, onions, peppers, and boneless chicken, beef, or shrimp into 1-1/2 inch cubes
Place meat in bowl and cover with your favorite Italian dressing
Sprinkle generously with any CAPTAIN BBQ rub
Refrigerate overnight.

The next day, skewer and barbeque as usual...
